The primary goal of a proof of concept (POC) is to thoroughly examine the assumptions made to develop a new business offering, before testing the actual product. This is done to avoid realising too late into your developmental stages that your offering might not be feasible as yet for a variety of reasons. Should this be the case, a POC can help you redirect your offering towards a more actionable solution and save you from irrecoverable decisions made based on unexamined assumptions.
